An ode to Friesland, the seasons, craftsmanship, hospitality, connection, and the memories we create together.
Even before you step inside, you are personally welcomed. Your coat is taken, and you are led to the heart of Ode: two open kitchen blocks, right in the middle of the restaurant, with tables around it. Here you will see how your evening unfolds.
An evening at Ode
At Ode, the boundary between kitchen and restaurant disappears. Every table overlooks the kitchen. Our chefs do not cook behind closed doors, but right among the guests. They personally bring dishes to the table, explain what you are tasting, and are visibly part of the hospitality throughout the evening.
We consciously work with a small team. This way, you will see the same faces throughout the evening. The chef who just tasted a sauce may later present your dish. A colleague holds the door open for you, refills your drink, or shows you up close how our kitchen operates. Everyone has their own role, but we create the evening together.
Ode accommodates about 26 guests, depending on the table arrangement. This small scale gives us the space for what we value most: genuine attention.
We hope that years later, you will not only remember what you ate, but especially think: do you remember what a lovely evening we had there?
The New Frisian Cuisine
Our kitchen starts as close to home as possible. First, we look at Dokkum, then at Friesland, and then at the rest of the Netherlands. The season determines what is available, and the product determines what happens with it.
Chef Liudger cooks from the principles of Dutch Cuisine, with vegetables in the spotlight and with respect for the product, origin, and season. At Ode, this thought has taken on its own form: the New Frisian Cuisine.
Local is not a limitation for us, and sustainability is not an empty promise. It is a daily way of choosing. How close can we stay without compromising on flavor?
On the plate, every component has a reason. Soft sometimes calls for crunchy. Rich for sour. Sweet for a little salt. Nothing is there as filler; every component must add something to flavor, structure, or balance.
Made to enhance each other
New dishes can take weeks or months to develop. Liudger creates, tastes, and refines. Ryanne tastes along and monitors the ratios: more acidity, less salt, a bit more cream, just less oil – or simply not adding another flavor.
Then the pairing is also tasted. Because a wine does not have to be the most obvious choice apart from the dish. Sometimes that very wine gives a dish something juicy, fresh, or exciting back.
A dish is complete for us when everything helps each other. We often recognize that moment very simply: we take a bite, look at each other, and start laughing.
Wine & pairing
Wine without limits to curiosity
Our wine choices follow the same local story as the kitchen. In the pairing, we therefore confidently serve Dutch wines when they enhance a dish. Guests who are initially skeptical about this often leave enthusiastically.
On the wine list per bottle, we look further, but consciously not all over the world: the selection consists of European wines. It is not the most expensive or well-known name that determines what we serve. Flavor, character, and the place at the table do that.
Our non-alcoholic pairing is also not an alternative that exists alongside. It is developed as a full-fledged pairing, with the same attention to excitement, freshness, structure, and balance.
