The kitchen is not a backdrop, but the beating heart of the evening

When you arrive at the monumental building in the historic center of Dokkum, the facade reveals little of what is happening inside. That’s why a colleague is waiting for you. You are welcomed, your coat is taken, and together you walk inside.

From the hall, you almost immediately step into the restaurant and the kitchen. Two large kitchen islands form the centerpiece of the space; the tables are arranged around them. Every guest has a view of the chefs.

From your table, you see dishes being created

You see the concentration, but also the joy of the team. Our chef, sous-chef, and demi-chef de partie cook and are part of the service: they present dishes, clear away, set new cutlery, and talk about what they have made.

That natural collaboration is important to us. When the team enjoys themselves and everything flows smoothly, the guest feels that. Behind that calmness lies a lot of preparation. If something goes differently than planned, we resolve it without it taking over your evening. Another glass of wine, something extra while the kitchen needs a moment, or sharing a laugh when someone unexpectedly walks the wrong way.

Curiosity is enough

Fine dining doesn’t have to be stiff with us. You don’t need to be a wine expert, know gastronomic rules, or prove anything.

Some guests celebrate their wedding, birthday, or anniversary with us. Others come after a long workday, receive a dinner as a gift, or save for a long time for their first special restaurant visit. And still others dine at a high level weekly or monthly. At the table, everyone is equal to us.

A successful evening for us is one where laughter and conversation happen at every table. Where a dish leaves someone momentarily speechless. Where a Dutch wine dispels a prejudice. Where a young team shows how much craftsmanship can be found in a small brigade.

The flavors should linger. The memory even longer.

And when you step back through the same door at the end of the evening, we hope above all that you had a wonderful evening together.
