Wine and dish should help each other

At Ode, wine does not sit next to the dish. Ryanne and Liudger are closely aligned in flavor: bold, rich in taste, and always seeking balance. Therefore, a suitable bottle is not only sought after the meal. During development, tasting, adjusting, and recombining happens together.

A pairing can make a dish juicier, restore freshness, or extend a flavor. Sometimes a wine is challenging on its own, but next to the dish, it suddenly becomes the perfect choice. We find that moment more interesting than a label that primarily makes an impression.

The Netherlands in a glass

When the kitchen increasingly focused on local ingredients, it made sense to also look closer to home for the glass. Dutch wine thus became not a gimmick, but an extension of our kitchen.

We serve Dutch wines because they are good and because they can enhance a dish. Perhaps the most beautiful moment is when a guest who was initially hesitant enthusiastically asks about the bottle at the end of the evening.

In addition to the pairing, our wine list consists of European wines. From classic regions to smaller producers and surprising origins: the selection revolves around quality, character, and whether a wine adds something to the evening.

Non-alcoholic, fully-fledged

Those who do not drink alcohol do not have to settle for ‘something without’ at Ode. Our non-alcoholic arrangement is crafted as a full-fledged pairing. Every drink must fulfill the same function as wine: to create tension, support a flavor, bring freshness, or create calm.

Here too, it must help each other.
